Chimichurri Meatballs

Equally delicious hot out of the oven or chilled (e.g. in a pita with sliced cucumber & yogurt sauce) the next day these little suckers definitely turn grandma's meatballs up a notch. 

INGREDIENTS

1 lb. lean ground turkey
3 tbsp almond flour (or flour of choice)
1 large egg
1/2 cup chopped cilantro
1/2 a medium jalapeno, minced
1 tsp dried oregano
1 tsp minced garlic
1 tsp sea salt

DIRECTIONS

Combine ingredients for meatballs in a medium mixing bowl. Use hands to thoroughly combine form minute into golf ball sized meatballs.

Heat 2 tablespoons olive oil in a skillet over medium heat. Add 5-6 meatballs to pan and cook 6 minutes. Use tongs to turn meatballs and cook an additional 6 minutes. Repeat with remaining mixture. Serve meatballs hot or chilled.
