File this one under "Dessert Hacks". If there is one thing I've learned over the years it's that sometimes the quickest and easiest way to delight and impress guests is simply to serve a tried and true crowd-pleaser in new and unexpected way. This key lime "pie" recipe is exactly that.
No, you probably won't win any bake-offs with this recipe (primarily because there is no baking involved) but you will save yourself considerable time and sweat equity... and who couldn't use more time in the day?
Don't get me wrong, I love to bake in jars. And if you're looking for a more authentic key lime custard in your mini pies, I highly recommend this recipe from Home Cooking Memories. It's almost just as easy but you do have to fire up the oven. But let's face it, it's still hot out there... and any excuse not to do so is an excuse I'm willing to make.
And if you are so inclined, this is also a fantastic recipe to make with kids.
1 cup vanilla pudding
1 tbsp lime zest
2 tsp lime juice
2/3 cup graham cracker crumbs
1/2 cup whipped cream or nondairy whipped topping
Mix vanilla pudding, lime zest, and lime juice in a bowl. Layer half the graham cracker crumbs, then half of the pudding and repeat. Top with whipped topping and garnish with a lime wedge and/or graham cracker. How easy is that?
