Mason jar salads have been a full-blown craze for several years now. I have a rotation of several favorites that I love but every once in awhile I get tired of the ol' standbys and decided it was time to add new talent to the line-up. You know that feeling when you're craving something but you don't know what? That's how I was feeling. Stuck. In need of inspiration.
Until recently when I was at a summer picnic and someone brought a broccoli salad that was to die for. I couldn't quite pinpoint what it was about it that was so crave-worthy until I realized it's "all of the above". I think all of us have likely experienced a dish like this at one point or another. You know... the rare gem of a recipe that can unilaterally satisfy just about any kind of craving. This is one of those recipes. Sweet, tangy, crunchy, creamy, savory... a real feast for the senses.
If you're tired of the same old mason jar salad recipes, give this one a go. The broccoli and walnuts do a fine job of maintaining their crunch for several days but if you plan to assemble the ingredients in the jar more than 3 days out you might want to wait before shaking them up to combine.
1/3 cup mayonnaise
2 tsp raw honey
2 tsp apple cider vinegar
1/8 tsp black pepper
1.5 cups broccoli
2 tbsp diced red onion
2 tbsp chopped walnuts
2 tbsp dried cranberries
1 tbsp crumbled bacon
Add all ingredients to a 16oz jar. Shake to combine before serving.
