I'll admit I'm mildly obsessed with Trader Joe's. I make the 25 minute trek every weekend to the closest outlet to get my fix. At one point I seriously considered starting a food blog dedicated to meals and meal hacks you can make with ingredients found at your local TJ's. I still may! But in the meantime, I have a go-to list of favorites that I regularly refer to for quick weeknight meals.
Everyone knows that Trader Joe's has a lot of frozen meals that are great in a pinch. But for my money the thing that's really game changing is that you can find a host of fresh and frozen pre-prepped ingredients that can serve as a short cut to creating your own homemade meals in minutes.
Today's recipe is a great example of one such meal. Sure you could steam the rice, grill the chicken, and fire-roast the corn yourself.... OR you could buy them pre-made at Trader Joes and just assemble the ingredients into a delicious, quick, and easy weeknight meal or take-along lunch. Seriously it doesn't get much easier and more delicious than this folks.
Ingredients:
1/3 cup Trader Joe's frozen brown rice
1/2 cup Trader Joe's fresh (or frozen) grilled chicken - or sub rotisserie chicken
1/3 cup Trader Joe's frozen fire roasted corn
1/4 cup chopped red onion
1/4 cup diced avocado
1/4 cup diced tomato
cilantro (to taste)
2 tbsp lime juice
2 tbsp greek yogurt or mayo
1/4 tsp cumin
