This one goes out to all the lunch packers and meal planners out there. This make-ahead lunch ticks all the boxes.
✔ Protein-packed2 cups cucumber, chopped
2 cups grape tomatoes, halved
2 cups cooked lentils
1/3 cup crumbled feta
1 tbsp chopped basil
1 tbsp chopped dill
1/4 t sea salt
3 tbsp olive oil
2 tbsp red wine vinegar
2 tsp grainy mustard
Combine ingredients for dressing in a large mixing bowl. Stir well to combine. Add chopped vegetables, lentils, herbs and feta cheese. Stir well to combine. Season with sea salt. Refrigerate until serving.
