I'm not sure why it took me so long to make my own roasted nuts but now that I discovered this recipe I'm afraid there's no going back.
WARNING: Highly addictive! Don't say I didn't warn you...
2 cups unsalted nuts (almonds, cashews, macadamia, etc.)
1 tbsp olive oil
1/2 tsp fresh thyme
1/4 tsp sea salt
1/8 tsp onion powder
1/8 tsp garlic powder
Preheat oven to 325F and line a baking sheet with parchment paper. In a mixing bowl combine olive oil and seasonings. Add nuts and stir well to coat.
Pour onto baking sheet and spread evenly. Bake 20-25 minutes. Cool at room temperature. Store in jar once cooled.
