Ok, I cave. It's October and I've resisted long enough. As much as I love fall in New England I'm always a little reluctant to admit to myself that summer is over. But after this past week it's difficult to ignore. There is a subtle briskness to the air, the days are noticeably shorter, and I have finally resorted to retiring the flip flops... [DEEP BREATHS]... Yes, my friends it's time to buck up and embrace fall with open arms. And if you're like me that means... BRING ON THE PUMPKIN SPICE!!!!
Mother nature is a frikkin genius. I mean what better way to lure us willingly into the season than a delicious, fragrant, indulgent treat that is reserved for just such an occasion? Seriously... Genius. No wonder she's in charge. No surprise, this one is definitely a winner. Sweet, chewy, spicy, hearty... I mean, what's not to love? But unlike that $5 latté we all drool over this time of year, this guy is both satisfying and healthful—and most importantly won't end in a sugar crash.
So although this weekend my apple picking plans have been thwarted by the impending rain, I refuse to let that dampen my spirit. I am determined to get my fall on. And I'm not messing around. One 15oz can of pureed pumpkin is enough to make 15 portions of this delicious breakfast take-along treat. Lucky for me I have no shortage of mason jars on hand so I'm pre-making breakfasts for the whole fam-damly this week!
