Asian Crunch Salad

I'm always on the look-out for fun, new, mason jar salad ideas. Recently I had an amazing salad at a favorite local seafood restaurant. It was served with a lovely piece of grilled salmon on top. But the star of the show was by far the salad beneath. It was the perfect blend of sweet, savory, crunchy, tangy goodness! And what's even better is that it's super easy to make at home and pack for delicious lunches all week!

This is a hearty salad and unlike a more delicate lettuce, the shredded cabbage could easily stand up to the dressing for several hours. So if you plan to make it in the morning for lunch you could dress the salad ahead rather than keeping the dressing separate. However if you want to make this salad for the week (which I highly recommend... it won't disappoint!) or you want to ensure it's extra crispy you can pack them bento-style by packing the dressing in recycled applesauce cups.

Optional additions or substitutions you may want to experiment with:

add red chili oil or minced serrano pepper to the dressing (for a bit of heat)
swap rice wine vinegar for lime
swap julienned green apple for pear
swap out salt for a dash of soy sauce
swap cashews for slivered almonds or peanuts
add matchstick jicama or english cucumber
add a piece of grilled salmon, chicken, or shrimp
