With back-to-school just around the corner, we've been testing some new weeknight family-friendly meals. This updated sloppy joe recipe is a great way to sneak in a few veggies (shhhh we won't tell) but we're betting your kids will gobble it up before they even notice!
1 lb. 93% lean ground beef
1 small green bell pepper, chopped
1 small jalapeño, finely chopped
10 oz. sliced baby portobello mushrooms
2 cloves garlic, minced
1 tsp coconut sugar
1 tsp dried oregano
1 tsp paprika
1/4 tsp onion powder
1 tsp sea salt
3 tbsp tomato paste
1 tbsp yellow mustard
2 tbsp coconut aminos (or sub soy sauce)
1/2 cup water
1/4 cup thinly sliced green onion
Heat a medium skillet over medium heat and add ground beef. Use a spatula to break up beef into small crumbles. Cook 5 minutes. Add bell pepper, jalapeño and mushrooms. Stir well and continue to cook 5 minutes or until peppers and mushrooms start to soften.
Add garlic and dry seasonings to skillet and stir well to thoroughly to coat meat and vegetables. Add tomato paste, mustard, coconut aminos and water. Stir until tomato paste is dissolved. Reduce heat to low and cook 10 minutes longer. Enjoy hot garnished with sliced green onion and jalapeño.
