Need another healthful breakfast alternative to overnight oats? These Cardamom-Tangerine "Mason Muffins" may be our new favorite life hack. Prep, bake, and take right in the jar.
2 large eggs
1 tbsp honey
2 tbsp coconut oil
1/4 tsp vanilla extract
2 tbsp tangerine juice
1 tsp tangerine zest
1/2 cup almond flour
1/4 tsp cardamom
1 tsp baking powder
2 tbsp coconut butter (or butter)
1 tsp honey
Beat eggs in a 16 oz mason jar until combined. Add honey, coconut oil, vanilla, tangerine juice & zest, almond flour, cardamom, and baking powder.
Bake in a preheated oven at 350° for 25 minutes. Top with glaze (coconut butter & honey).
