Another keeper for all you meal planners/lunch packers! I've been daydreaming about how much I want to devour this all morning... Is it lunchtime yet?
1 lb. whole wheat pasta
1 cup sliced cucumber
1 bell pepper, julienned
1 handful cilantro, chopped
1/2 cup creamy unsalted cashew butter
1/4 cup lime juice
3 tbsp coconut aminos
2 tbsp toasted sesame oil
1/4 tsp sea salt
1/8 tsp sesame seeds
Combine ingredients for dressing in the bottom of a large mixing bowl. Stir well.
Cook pasta according to package. Strain and allow to cool 5 minutes. Add noodles to mixing bowl. Toss to coat in sauce. Add remaining ingredients and toss again. Refrigerate 20 minutes before serving.
