This easy and highly addictive snack is a one of our favorite (not that guilty) pleasures. Not gonna lie... We may need a bigger jar for this one next time.
4 cups frozen (fully cooked) edamame in pods
2 T toasted sesame oil
1 t grated ginger
1/2 t garlic, minced
1/4 t chili flakes
1/8 t sea salt
1/8 t sesame seeds
Boil edamame for 2-3 minutes. Strain and blot dry with a clean kitchen towel.
Heat sesame oil in a large pan over medium heat. When oil is shimmering hot, add edamame and ginger. Cook 3 minutes stirring occasionally.
Add garlic and chili flakes, cook an additional 3 minutes. remove from heat. Stir in sea salt and sesame seeds. Serve hot.

We all like the idea of making our families healthy meals, saving money and doing our part to cut down on waste.
But we also like the idea of getting a good night’s sleep, not having a huge mess to clean up in the kitchen after dinner and — just maybe — having time to watch a bit of Netflix or read a book.
