Millions of peaches for me!
2 ripe peaches, halved and pitted
1 cup mascarpone cheese
1/4 sliced pecans
2 tbsp honey
1/4 cup blueberries
1 tbsp coconut oil
Grease a 10 inch cast iron grill pan with coconut oil over medium high heat for 3 minutes. Place peaches on pan cut side down and grill 4-5 minutes.
Remove peaches from pan and scoop 1/4 cup mascarpone on top of each. Decorate with pecans, blueberries and a generous drizzle of honey.
