There are two types of recipes: Those that make for great leftovers and those that, well, don't. Then there are recipes like this one. Not only is it fantastic hot out of the oven but perhaps even better chilled the next day. Enjoy tossed in a salad, over couscous, or even enjoyed cold directly out of the jar. #winnerwinner
1 head of cauliflower, broken into florets
1/4 cup olive oil
1 T parsley, chopped
1 T chives, chopped
1 t lemon zest
1 t minced garlic
1/2 t thyme, chopped
1/2 t rosemary, chopped
1/4 t sea salt
Preheat oven to 400ºF. Stir herbs and zest into olive oil. In a large mixing bowl, pour over cauliflower florets and toss to coat. Pour onto baking sheet and spread evenly. Bake for 25-30 minutes.
