Looking for creative ways to use all those yummy fresh veggies you scooped up at your local farmer's market or CSA? Have a go at this Lemon Dijon Quinoa Salad! Sub whatever veggies/greens that are fresh or in season for a fantastic ready-made lunch on the go!
Even better-- prep several jars ahead (following instructions below for how to layer contents in the jar) and have at the ready to enjoy throughout the week.

The recipe below is for one serving to be stored in a 24oz mason jar. However the recipe can easily be multiplied to prep multiple meals ahead for the week.
2 cups cooked quinoa
1 medium bell pepper, finely chopped
1/2 cup chopped red onion
1 cup greens of choice (pea shoots, arugula, parsley, kale)
juice of 1 small lemon
2 tbsp olive oil
2 tbsp dijon mustard
1 tsp honey
1/4 tsp sea salt
Mix together dressing ingredients. Pour into jar.
Layer remaining ingredients in the order they appear.
Store in fridge for up to one week. When ready to serve, shake to combine or dump contents of jar into a large bowl.
