It's grilling season and if you're looking for some inspiration for a quick weeknight meal we have a winner! This Pineapple Salsa is delicious when served alongside grilled fish, chicken, or even rice & beans. 🍍🍗🍽️
2 cups pineapple, chopped into small pieces
1 large tomato, chopped into small pieces
1/2 cup cucumber, peeled and chopped
1/4 cup red onion, finely chopped
1/3 cup chopped cilantro
1/4 tsp ground cumin
1/4 tsp sea salt
1/8 tsp chili flakes
juice of 1 small lime
Stir ingredients together in a mixing bowl. Refrigerate and store in a mason jar for up to 1 week.
