Strawberry Basil Goat Cheese Bruschetta

Too good not to share! I call this one "SUMMER on toast". 

INGREDIENTS

2 cups grape tomatoes, quartered
1 cup strawberries, chopped
1 handful fresh basil leaves, chopped
1 tbsp olive oil
1/4 tsp minced garlic
1/4 tsp coarse sea salt
1/8 tsp black pepper
1 cup goat cheese crumbles
french bread or toast points for serving

For Glaze

3 tbsp raw honey
1 tbsp balsamic vinegar

DIRECTIONS

Stir together ingredients for glaze until thoroughly mixed. Combine tomatoes, strawberries, basil, garlic, olive oil, sea salt and black pepper in a mixing bowl. Stir.

Toast sliced bread under a broiler for 4-5 minutes on a baking sheet. Spoon goat cheese onto warm bread. Top with bruschetta and drizzle balsamic glaze on top.
