I know I'm a sucker for anything with tahini dressing but this Superfood Salad just may be my favorite mason jar salad yet! A delicious combo of savory/sweet/crunchy goodness chock full of nutrient-dense whole foods that will fill you up without weighing you down. Perfection!
1/4 cup tahini
2 tbsp olive oil
2 tsp apple cider vinegar
1 tsp honey
1/2 cup edemame
1/2 cup blueberries
1/2 cup pomegranate arils
2 cups baby arugula
2 tbsp sliced almonds
Combine tahini, olive oil, apple cider vinegar, and honey in a 32oz mason jar. Stir to combine. Layer remaining ingredients in order they appear. Secure lid and store in refrigerator for up to 1 week.
