Because sometimes you just can't do another morning of overnight oats... Mason jar frittata anyone?? Perfect for a Sunday morning brunch or make ahead and reheat in the microwave for a quick on-the-go meal.
So many different possibilities here but this asparagus, sun-dried tomato, and feta combo is my personal favorite!
3 large eggs (beaten)
1/4 cup unsweetened almond milk (or milk of your choice)
1/2 cup chopped asparagus
1/4 cup julienned sun-dried tomato
1/4 cup crumbled feta cheese
1/8 tsp black pepper
Combine all ingredients in a 16oz mason jar or oven safe dish. Bake at 350° F for 25-30 minutes.
