Maybe it's because it's summer and all rules of decorum seem to no longer apply, but lately in our house we are slightly popsicle obsessed. So much so that I frequently get requests for pops for breakfast.
What the heck, why not?
1 cup Greek yogurt
2 ripe bananas, sliced
3 tbsp coconut sugar
1 tsp cinnamon
2 T ghee (or sub butter)
1 cup granola
Heat ghee in a medium pan over medium heat. Add bananas and cook 5 minutes. Use a spatula to gently flip banana slices. Sprinkle coconut sugar and cinnamon on top of bananas and cook 5 minutes longer.
In a mixing bowl, fold banana mixture and sauce into Greek yogurt until fully incorporated. Spoon evenly into 6 popsicle molds and add wooden sticks. Freeze 4-6 hours. Serve with granola.
