It's raspberry season and chia is our new jam! Did you know using the gelling power of these tiny little seeds you can transform those freshly picked berries into a low-sugar, spreadable, spoonable jam in about 20 minutes? Yep.
1 cup raspberries
1 cup sliced strawberries
2 T raw honey or sweetener of choice
2 T chia seeds
Heat raspberries and strawberries in a medium saucepan over medium heat. Once berries start to soften, mash with a fork until smooth and well combined. Reduce heat to low. Continue to simmer for 2 minutes.
Remove from heat and stir in raw honey and chia seeds. Pour into a glass jar with lid and cool to room temperature. Refrigerate at least 4 hours.
