I just snuck away for a little R&R at the beach resort this weekend and earlier today I was perplexed as to why so many adults were ordering popsicles at the beach bar. Then I finally noticed the placard menu advertising these deliciously boozy concoctions. I'm not sure when boozy popsicles became a "thing" but this is one trend I plan to exploit thoroughly this summer.
1 cup sliced strawberries
2 ripe peaches, sliced
2 tsp coconut sugar
1 tbsp honey
1/4 cup water
1/4 cup tequila (vodka, rum or bourbon)
Combine strawberries, coconut sugar and 1/4 cup water in a jar. Stir to coat strawberries. Cover and refrigerate overnight. Pour mixture into a blender and blend until puréed.
Combine peaches, honey and 1/4 cup tequila in a blender. Blend until puréed. Pour peach purée evenly into 6 popsicle molds. Cover with aluminum foil and stick popsicle sticks into each mold. Freeze 1 hour.
Pour strawberry purée on top of peach layers. Cover and freeze 2-4 hours or until solid.
