Perhaps it's the anticipation of the Harvest Moon tonight but suddenly I'm craving all my favorite fall recipes. It's also a great time of year to get back into mason jar meal planning because so much of autumn's all-star produce is easily prepped in large batches (quite inexpensively) and keeps well in the fridge for up to a week.
This Butternut Squash Layered Harvest Bowl is no exception. Prep ahead on a weekend and have hearty, satisfying meals at the ready to help you power through the week.
1/2 cup roasted butternut squash
1/4 t fresh thyme leaves, picked
1/8 t sea salt
drizzle of honey
1/2 cup brown or wild rice
1/2 cup grilled chicken
2 tbsp walnuts
2 tbsp dried cranberries
Layer all ingredients in a 16oz mason jar and store in refrigerator up to 1 week. To serve dump contents of jar onto a plate and enjoy!
