Raspberry Ricotta Frosting/Filling/Dip


DELISH! This might be the best recipe hack I've stumbled upon in quite some time. Satisfies the craving for sweet, creamy goodness but without the instant regret of a traditional butter/shortening laden frosting.  It would also be delicious in a shortcake recipe!

INGREDIENTS

16 oz part skim ricotta cheese 
1/2 cup freeze dried raspberries
1/4 cup thick raw honey

INSTRUCTIONS

Place freeze dried raspberries in a high speed blender or food processor. Pulse until finely ground into a powder.

Pour berry powder into a mixing bowl with ricotta and honey. Use a spatula to mix and fold until thoroughly mixed. Refrigerate at least 30 minutes before frosting.
