Smoothie bowls meet... sweet potato? Yep!
Why sweet potato? Well, why not? Sweet potatoes are known for being one of mother nature's superfoods. They are an excellent source of vitamins D, C, B6 as well as magnesium and potassium. They have long been lauded for their anti-aging properties and can even help stabilize blood sugars which is why they make an especially great choice for your first meal of the day.
It might sound odd at first but I promise you these Sweet Potato Breakfast Bowls will make a convert out of you.
2 small white sweet potatoes, peeled and coarsely chopped
2 T coconut oil
1/4 cup unsweetened coconut or almond milk
2 tbsp honey or maple syrup
Optional toppings: fresh berries, sliced peaches, edible flowers, chopped nuts, chocolate chips, nut butter, shredded coconut
Place sweet potatoes in a pot covered with water. Bring to a boil over medium heat and continue to cook until very soft, about 20 minutes.
Strain potatoes and use a fork to mash until smooth. Stir in coconut oil, coconut milk and honey. Spoon into mason jar. Top with desired toppings. Enjoy hot or chilled.
